Ingredients:

  • 2 pomfret fish, cleaned
  • 1 cup yogurt, hung in muslin cloth for 15 minutes
  • 2 egg yolks

  • Butter for basting
  • Salt to taste
  • Onion rings and lemon slices for garnish
  • Indian bread of your choice, for serving

Method:

  1. Begin by cleaning the pomfret fish thoroughly. Make three deep incisions across each side of the fish to allow the marinade to penetrate.

  2. Hang the yogurt in a muslin cloth for 15 minutes to drain excess liquid. Squeeze out any remaining liquid from the yogurt.

  3. In a mixing bowl, combine the hung yogurt, egg yolks, and Ferns' Tandoori Paste. Mix well until you have a smooth marinade.

  4. Generously coat the pomfret fish with the marinade, making sure to rub it into the incisions and all over the fish. Allow the fish to marinate in the refrigerator for at least 3 hours to absorb the flavors.

  5. Preheat your grill or tandoor. Skewer the marinated fish and place it on the grill or in the tandoor.

  6. Grill the fish for 5-10 minutes, turning occasionally, until it is cooked through and has a beautiful charred exterior.

  7. Once cooked, remove the fish from the grill and allow excess moisture to drip off by hanging the skewers.

  8. Baste the grilled fish with butter and return it to the grill for another 6-8 minutes, until it is golden brown and fragrant.
