Ferns - Pork Vindaloo Recipe

Embark on a culinary journey with Pork Vindaloo, a quintessential Indian dish that tantalizes the taste buds with its vibrant flavors and aromatic spices. Ingredients:

  • 500g pork, cut into bite-sized pieces
  • 2 onions, finely sliced
  • 4 cloves garlic, crushed
  • 3 tablespoons Ferns' Vindaloo Curry Paste
  • 2 tablespoons vinegar
  • 2 tablespoons tamarind pulp
  • Salt, to taste
  • 1 cup warm water
  • 1 teaspoon sugar
  • Oil, for frying

Method:

  1. Heat oil in a large skillet over medium heat. Add sliced onions and fry until golden brown.

  2. Stir in the crushed garlic and continue to fry for another minute until fragrant.

  3. Add Ferns' Vindaloo Curry Paste and vinegar to the skillet. Fry the mixture for a few minutes until the spices are aromatic.

  4. Now, add the pork pieces to the skillet and fry for about 2 minutes, ensuring they are well coated with the spice mixture.

  5. Pour in the tamarind pulp and season with salt to taste. Then, add 1 cup of warm water to the skillet.

  6. Reduce the heat to low and simmer the pork vindaloo, covered, until the pork is tender and the gravy has thickened, stirring occasionally. This usually takes about 30-40 minutes.

  7. Once the pork is cooked through and the gravy has thickened to your desired consistency, remove the skillet from the heat.

  8. Sprinkle the sugar over the pork vindaloo and gently stir to combine.

  9. Serve the delicious pork vindaloo hot with steamed rice or naan bread, garnished with fresh coriander leaves if desired. Enjoy the rich and flavorful taste of this classic Indian dish!
