Ferns - Madras Lentil Soup Recipe

Madras Lentil Soup Recipe:

Ingredients:

  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • Bread slices, cut into cubes and deep fried
  • 2 tablespoons butter
  • 1 cup lentils, washed
  • 4 cups water
  • 2 tablespoons Ferns' Madras Curry Paste
  • White sauce
  • Salt and pepper to taste
  • Parsley for garnish

Method:

  1. Begin by chopping the onion, celery, and carrots into small pieces.

  2. Cut the bread slices into cubes and deep fry them until golden brown. Set aside for garnish.

  3. In a large pot or saucepan, melt the butter over medium heat. Add the chopped onions, carrots, celery, and washed lentils. Sauté the vegetables and lentils until they are slightly softened and aromatic.

  4. Pour in the water and add Ferns' Madras Curry Paste to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer gently until the lentils are fully cooked and tender. This usually takes about 20-25 minutes.

  5. Once the lentils and vegetables are cooked, remove the pot from the heat. Using an immersion blender or a regular blender, purée the cooked lentils and vegetables until smooth.

  6. Strain the puréed mixture through a soup strainer to achieve a smooth and velvety consistency.
