Madras Chicken Curry Recipe:

Ingredients:

  • 500g diced chicken
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • Ferns’ Madras Masala Paste
  • 1/2 cup yogurt
  • Fresh coriander, chopped
  • Salt to taste
  • Oil for frying

Method:

  1. Heat oil in a pan over medium heat. Add the chopped onion and diced chicken. Fry until the chicken is browned and the onions are translucent.

  2. Add Ferns’ Madras Masala Paste to the pan, stirring to coat the chicken and onions evenly. Fry for about three minutes to allow the spices to release their flavors.

  3. Add the chopped tomatoes to the pan and continue to cook for another three minutes, until the tomatoes are softened and pulpy.

  4. Pour in enough water to cover the chicken, then reduce the heat to low and simmer for about 30 minutes, allowing the flavors to meld together and the curry to thicken.

  5. Once the curry has thickened to your desired consistency, stir in the yogurt and chopped coriander. Adjust the seasoning with salt to taste.

  6. Simmer for an additional few minutes to heat the yogurt through and allow the flavors to mingle.

  7. Remove the Madras Chicken Curry from heat and transfer to a serving dish.

  8. Garnish with additional chopped coriander if desired, and serve hot with steamed rice, naan bread, or your favorite Indian flatbread.

  9. Enjoy the vibrant flavors and hearty textures of this delicious Madras Chicken Curry, and don't hesitate to experiment with beef, lamb, or prawns for a delightful variation on this classic dish
