Ferns - Hot Garlic Prawns Recipe

Hot Garlic Prawns Recipe:

Ingredients:

  • Shelled and deveined prawns
  • Salt
  • Vinegar
  • Ferns’ Garlic Paste
  • Oil for cooking
  • Finely chopped garlic
  • Tomato paste
  • Ferns' Hot Curry Paste
  • Ajinomoto (optional)
  • Cornflour
  • Refined flour
  • Eggs
  • Spring onion greens for garnish
  • Spring onion flowers for decoration

Method:

  1. Begin by washing the shelled and deveined prawns thoroughly. Marinate them with salt, vinegar, and Ferns’ Garlic Paste. Ensure that the prawns are evenly coated with the marinade. Set aside for a few minutes to allow the flavors to meld.

  2. Heat oil in a pan. Add finely chopped garlic and tomato paste. Sauté until the garlic becomes aromatic and the tomato paste is well incorporated.

  3. Add half a cup of water, salt, Ferns' Hot Curry Paste, and Ajinomoto (optional) to the pan. Stir well to combine all the ingredients. Allow the mixture to simmer for about 10 minutes, allowing the flavors to develop.

  4. In a small bowl, make a paste with 2 tablespoons of cornflour and a little water. Stir this paste into the sauce to thicken it to your desired consistency.

  5. In another bowl, prepare a batter with cornflour, refined flour, eggs, and salt to taste. Dip the marinated prawns into the batter, ensuring that they are well coated.

  6. Heat oil in a deep frying pan. Carefully add the battered prawns to the hot oil and deep fry until they turn golden brown and crispy. Remove from the oil and drain on paper towels to remove excess oil.

  7. Once all the prawns are fried, add them to the hot garlic sauce in the pan. Toss gently to coat the prawns evenly with the sauce.
