Ferns - Boneless Chicken Kari Recipe

Boneless Chicken Kari Recipe:

Ingredients:

  • 500g boneless chicken, cut into pieces
  • Salt to taste
  • 1/2 teaspoon turmeric powder
  • 2 tablespoons Ferns' Ginger Garlic Paste
  • 1/2 cup yogurt (curd)
  • 2 tablespoons oil
  • 2 onions, finely chopped
  • 2 tablespoons Ferns' Mulligatawny Curry Paste
  • 2 cups water
  • 1/2 cup coconut milk
  • Mustard seeds for tempering
  • Curry leaves for tempering

Method:

  1. Begin by marinating the chicken pieces with salt, turmeric powder, Ferns' Ginger Garlic Paste, and yogurt (curd). Ensure the chicken is well coated in the marinade, then set it aside for about 30 minutes to allow the flavors to infuse.

  2. Heat oil in a large pot or skillet over medium heat. Add the finely chopped onions and sauté until they turn golden brown and caramelized.

  3. Once the onions are golden brown, add Ferns' Mulligatawny Curry Paste to the pot and sauté for a minute until fragrant.

  4. Now, add the marinated chicken pieces to the pot and stir well to coat them in the spice mixture.

  5. Pour in 2 cups of water and bring the mixture to a gentle boil. Once boiling, reduce the heat to low and let the chicken simmer, covered, until it is cooked through and tender. This usually takes about 20-25 minutes.

  6. Once the chicken is cooked, pour in the coconut milk and stir well to combine. Let the curry simmer for another 5 minutes to allow the flavors to meld together.

  7. In a separate small pan, heat a little oil and add mustard seeds. Once the seeds start to splutter, add curry leaves and sauté for a few seconds.

  8. Pour the tempered mustard seeds and curry leaves over the simmering chicken curry, stirring gently to incorporate.
