Ferns - Bagara Baingan (Eggplant / Aubergine) Curry Recipe

Bagara Baingan (Eggplant / Aubergine) Curry Recipe:

Ingredients:

  • Eggplants (aubergines), slit lengthwise
  • Onions
  • Garlic cloves
  • Coconut
  • Tamarind pulp
  • Ferns' Hot Curry Paste
  • Sesame (til) seeds
  • Green chillies
  • Jaggery
  • Salt to taste
  • Mustard seeds
  • Hing (asafoetida)
  • Curry leaves
  • Oil for frying

Method:

  1. Begin by slitting the eggplants lengthwise and deep frying them until they are golden brown and tender. Set aside.

  2. In a blender or food processor, grind together onions, garlic cloves, and coconut until you achieve a smooth paste.

  3. Add tamarind pulp and Ferns' Hot Curry Paste to the masala paste, mixing well to combine all the ingredients.

  4. In a dry pan, roast sesame (til) seeds until they turn fragrant and golden brown. Grind them into a fine powder and set aside.

  5. In the same oil used for frying the eggplants, add green chillies and the ground masala paste. Fry on a slow flame until the oil starts to leave the sides of the masala.

  6. Once the masala is cooked, add the ground sesame (til) seed powder and simmer for 5 minutes, allowing the flavors to meld together.

  7. Stir in jaggery and salt according to your taste preferences.

  8. In a separate pan, heat oil and temper it with mustard seeds, hing (asafoetida), and curry leaves.

  9. Add the fried eggplants to the tempered oil, sautéing them gently to coat them with the tempering.

  10. Transfer the eggplants to the simmering masala gravy, ensuring they are well coated with the sauce.

  11. Serve the Bagara Baingan Curry hot, garnished with fresh coriander leaves if desired.
